Last week I introduced you to “I can’t believe it’s not chocolate”, however I have since gone gluten free so I needed something else chocolatey without the oats. Last night I created something wonderful that I will call “Delicious Uncooked Nuggets of Goodness”. It really is a perfect description because the first letters of the words spell DUNG and unfortunately that is what they look like. I even took them into work today and my boss says (completely unprompted), “These are delicious goat droppings you have made Emma”. I really would ask that you focus on the word delicious because they really are! And also very nutritious – full of Omega-3 fatty acids to reduce inflammation as well as Vitamin E and zinc both of which look after the skin. So give them a go – they are a lovely snack and will give you a burst of energy without the jittery sugar high. I tried to photograph them but there wasn’t an Instagram filter that made them look like anything but droppings.
Delicious Uncooked Nuggets of Goodness
3 cups of mixed nuts and seeds – I used mostly walnuts but also almonds, cashews, sunflower seeds and pepitas
1 cup of shredded coconut
2/3 cup cacao (or cocoa) powder
8 – 10 dates, pitted
1 tablespoon of rice malt syrup (to taste)
1/4 cup of water
pinch of salt
Method: Combine the nuts and seeds, dates and coconut into a food processor and pulse until they are combined. Add the rest of the ingredients and pulse until the mixture looks like dough. Roll the dough into medium sized balls and place into the fridge to set for at least 30 minutes before serving. If you are really offended by their appearance then roll them in buckwheat, white chia seeds or more coconut.
