I have spent a considerable amount of my life ignoring my gut.  Whether that’s pain symptoms or gut instinct, it didn’t matter.   Here are some examples:

My gut: I’m pretty sure you aren’t that happy in the corporate environment

Me: I love it, it’s my career, I’m just tired

Reality: I didn’t mind it, but I am definitely happier doing something else

 

My gut: I have a lot of pain at that time of the month and almost all the time

Me: Everyone has painful periods

Reality: I have stage 4 endometriosis

 

My gut: I really think you want to be home with your family

Me: As if I can move to Albany.  What would I do there?

Reality: I did want to be home with my family and I am VERY happy now and there is never (hardly ever) a dull moment

 

So when my gut started getting sore again I didn’t hesitate to go and see the doctor.  And although the initial ultrasound hasn’t shown anything, I have been sent for more tests as  it might be IBS or coeliacs or any number of other things…  And I will keep following my gut until I figure out what it is.

This morning, with the thought of a possible gluten intolerance at the back of my mind and a hankering for pancakes I set out and made these delicious little morsels

Gut Instinct Pancakes

Gut Instinct Pancakes

1/2 cup ricotta

3 eggs

3/4 cup almond meal

2 tablespoons linseed meal

2 tablespoons of coconut flour

1 cup almond milk

1/cup vanilla protein powder

1/4 cup coconut flakes

1 teaspoon of bicarbonate of soda

pinch of salt

cinnamon and vanilla powder to taste

Mix it in a blender or food processor.  Cook on a hot pan like normal pancakes.  I served it with Greek yogurt and blueberries.  You could also substitute the ricotta with mashed bananas.
