Dave went away on Wednesday. He’s back tonight but I’ve kind of felt a bit lonely rattling around in this big house. And this place is cold!

So after work last night I snuggled under a blanket and watched the season final of “Girls”. And had a bit of a cry… But that only lasts 30 minutes. So what next?

Well duh, a girl’s night home alone obviously means baking and Justin Timberlake. Doesn’t it? The added bonus of baking is that the oven warms the house. The bonus of JT is… Not sure actually. I wasn’t a big fan of his new album on my first listen.

So here are my gluten-free, (almost) sugar-free choc chip cookies! I’m pretty sure the chips have some sugar but other than that these are pretty harmless in small doses! A bit like Justin Timberlake.

Keep Me Company Cookies

1 cup almond meal
1 cup coconut flour
1/4 teaspoon of baking soda
1/4 teaspoon of salt
1/2 cup melted coconut oil
1/4 cup rice malt syrup
1 heaped teaspoon vanilla powder
1/4 cup almond milk
1 cup of dark chocolate buds. I added a few pistachios too

Mix all the ingredients. Shape into cookies and cook at 180 degrees until golden.
