So far, I’m doing ok with my Paleo. I had a bit of rice at lunch yesterday. And I am currently referring to myself as lacto-Paleo because I am still eating dairy. I have dropped over a kilo since the weekend, but to be honest that happens most weeks. Which is why the scales aren’t the best “judge” of your body. Measure your waist, or see how your favourite snug pants fit. That’s the best way to track your progress. My waist measures pretty much the same today, as it did on the weekend, as it did 2 weeks ago. So all good there!
The best thing about being Paleo is the instant increase in veggies. When you are (generally) not eating grains, then more veggies are required. So, instead of rice with my curry last night I had broccoli. It’s great!
Today I wanted something easy for lunch. So I filled a bowl with veggies, bacon, eggs, spices & feta and popped it in the oven. And the result was yummy!
Eggs baked in a bowl
1.5 cups of veggies, finely chopped. I used capsicum, mushroom, zucchini, tomato & spring onion
1 strip bacon, finely chopped
1 tablespoon of feta, chopped
Salt, pepper, chilli flakes
Method: Heat the oven at 180 degrees Celsius. Mix all ingredients in an oven proof bowl sprayed with olive oil. Bake for 15 to 20 minutes until set. Serve with a side salad. BEWARE OF THE HOT BOWL!!
