I’ve got a feeling that I have a gluten intolerance. Despite my increased nutritional intake and my general feeling of wellbeing I still have a few niggling problems. I get headaches a lot. Some of these are due to my eyesight (the optometrist tells me I’m officially old!) but some happen seemingly randomly. I get a flaky scalp and still break out in acne a lot. And I can get extremely tired (I guess we all do, but I get 7.5 to 8 hours a night so it shouldn’t be this way). I also get the obligatory stomach problems. And brain fog plagues me – I feel like I’m always misplacing files at work. So, when you read about gluten intolerance you can see I tick a lot of the boxes.
My plan is to go gluten-free for 7 days, note how I feel, and then re-introduce gluten. It will be interesting to see what happens!
So, this morning I didn’t feel like a smoothie and normally I would have oats. But oats are usually contaminated by gluten (and they do contain gluten but only a small percentage of people with gluten intolerance have a problem with it). So this morning I turned to a yummy new recipe I found on The Holistic Ingredient website. It takes about 10 seconds to make and is so nutritious! Enjoy.
1/4 cup almonds
1/4 cup shredded coconut
1 fresh date
Put it all in a food processor for about 5 seconds. Serve with yogurt and berries. Yum!
