It’s gotten cold here in Albany. Really cold. Probably not as cold as the Labor Caucus room but still cold enough to warrant some comfort food.

My mum has gone away and asked me to check her mail for her. As I’m an obedient and dutiful daughter I did just that yesterday. I also took the opportunity to steal her slow cooker. I think that’s a fair trade? Last night I pulled together a gorgeous recipe for quinoa porridge that cooks overnight. I slept lightly, worried that my house would catch fire and I woke excited to eat my breakfast. But I’d forgotten to turn the damn thing on! So I made eggs and switched on the cooker before I left for work. I spent the morning again worried that my house would burn down. Thanks to my Facebook buddies who reassured me that such worries are normal. I do wonder when they will fade… Any ideas?

I was pretty excited to get home at lunch to watch the leadership spill and eat my porridge. One of these things was a massive anti-climax and I’m happy that it wasn’t my porridge.


Cold Comfort Quinoa

1 cup quinoa
1/4 cup rolled oats
A handful of pepitas
A handful of raw whole almonds
2 heaped tablespoons of linseed meal
1.5 cups of frozen berries
2 cups almond milk
2 cups water
Rice malt syrup (to taste, optional)
2 teaspoons of cinnamon
2 teaspoons of vanilla powder
2 tablespoons of coconut oil
Yogurt, shredded coconut, goji berries to serve

Put everything in the slow cooker (except yogurt, coconut & goji berries). Turn slow cooker to low and cook for 6 to 8 hours. Serve with yogurt, coconut & goji berries)
