Us West Australians have a cute saying where we call the Eastern States “over East”. And it’s no secret that I’ve started missing over East. Mostly the people. Not the traffic, that’s for sure! But every once in a while I miss the food. You see, here in Albany we have one Thai restaurant and no Vietnamese. Yes, I’ll repeat that for those over East. No Vietnamese restaurants!

Yesterday I was a bit under the weather, it’d been raining and I really started missing pho. So I made my own! It’s not exactly authentic but it hit the spot. And to quote the Triple J Hottest 100 winner, “This is f-ing awesome!” (Apologies to my mum for the implied language but the song has been in my head since Australia Day).  And it really did help perk me up.

F-ing Awesome Pho

300g chicken mince
1 heaped tablespoon of finely chopped coriander
2 cloves garlic, minced
2 tablespoons of tamari

1 small packet of fresh egg noodles
1 litre of chicken stock
1 cup water
1 heaped teaspoon of minced ginger
2 cups of mixed carrot, mushroom, capsicum, chopped
1 large piece of bok choy, chopped
1 chilli, finely chopped
Chives & spring onions to garnish
Cracked pepper

Combine the chicken mince, coriander, garlic and tamari. Make approximately 10 chicken meatballs. Prepare the noodles according to instructions. Bring chicken stock, water and ginger to the boil. Add the chicken meatballs and simmer for 5 minutes. Add the chilli, carrot, mushrooms and capsicums with the noodles and continue to simmer for a couple more minutes. Add the bok choy until wilted. Divide into 2 bowls and garnish with chives, spring onions and pepper.
