Sometimes, like everyone, I really can’t be bothered cooking. But as I work part time I really can’t afford to get takeaway. At least I can’t justify it to myself. So tonight after working an 11 hour day I had to throw something together. Now, the plus side of working part time is that I have more time to cook things so I have ingredients to throw together on nights like tonight. Luckily yesterday I had a ton (500g) of over ripe tomatoes that I needed to use up so I made some tomato sauce. And then tonight I transformed it into a chicken pasta dish. Quick & easy & not a lot of washing up!

Can’t be arsed pasta

Pasta Sauce
500g over ripe tomatoes, chopped
1 can chopped tomatoes
1 large brown onion, finely chopped
6 cloves garlic, finely chopped
1.5 tablespoons cumin
1 tablespoon cinnamon
2 red chillies, sliced
Olive oil

Cook onions in a heavy based fry pan until translucent. Add garlic, chillies and spices. Cook for a couple of minutes until fragrant. Add all the tomatoes and perhaps a splash of water and simmer for 20 minutes. Store in an airtight container in the fridge for a night when you can’t be arsed (ideally within a couple of days).

Chicken Pene
400g chicken breast pan fried or grilled (or 1/2 store bought BBQ chicken shredded)
1/2 head of broccoli
2 handfuls of spinach
1/2 pack of Pene pasta.
Parmesan cheese

Cook pasta according to packet instructions. Two minutes before its finished cooking add the broccoli and spinach. After its cooked drain, then return to the pan and add chicken and tomato sauce. Serve & sprinkle with Parmesan. Done!
