Well this morning I woke up with the blahs. I’ve been head-achy and not sleeping well. It probably has something to do with my caffeine reduction and the liver detox tablets I am taking. It definitely has something to do with the fact that summer is over and so is the lease on this house next month. Which is tough. I love it here!
So, what’s a girl to do to cheer herself up? For me the perfect combination is music and baking! So that’s what I did this afternoon. I am currently teaching myself to play the ukulele. Today I’ve learned the chords to “I’m Yours” by Jason Mraz – which is a lovely summery, happy song. Although it’s frustrating, I do get a huge sense of satisfaction knowing I am getting better. And it’s also really lovely when my brother chips in with “Sounds great, Em!”
And in between attempts at the song I made some banana bread – the healthy version of course. Banana bread was one of my favourite foods in my past life. Many a stressful day were made better with a big thick slice slathered with margarine. Unfortunately this stress management tool was really doing nothing for me – just adding centimetres to my tummy and feeding my sugar addiction.
Therefore I was so happy to find this healthy version. It’s gluten and sugar free. Enjoy slathered in real butter (preferably organic). Just make sure to share it with friends!
“Fix the Blahs” Banana Bread
1/2 cup coconut flour, sifted
1/4 cup coconut oil
2 very ripe bananas roughly chopped
2 tablespoons of cinnamon
1 teaspoon of baking soda
2 tablespoons of rice syrup
2 tablespoons of coconut milk
Heat the over on 200 degrees Celsius. Whisk together the wet ingredients then add the dry and mix well. Use a mixer if needed to make it smooth. Add the banana chunks. Pour into a greased loaf tin and cook for 25 to 30 minutes until it passes the skewer test.
