I used to LOVE banana bread. It was my favourite pick-me-up when I was feeling stressed or down. Of course it didn’t ever help me – it actually made things worse. Excess calories, sugar rushes and bloating were common side effects. Luckily I kicked that habit ages ago. And now that I am avoiding gluten bread is generally off the cards too. But sometimes there is nothing better than a piece of straight-from-the-oven bread slathered in butter. And this morning I just had to make that happen.

Berry Bread

2 cups almond meal
1 tablespoon cinnamon
1 teaspoon baking soda
4 eggs, whisked
1 tablespoon vanilla extract
1 tablespoon vinegar
2 tablespoons maple syrup
1 cup mixed berries (defrosted if frozen)

Method: preheat oven to 160 degrees. Mix together almond meal, cinnamon and baking soda. In a separate bowl mix together all other ingredients (except berries) then mix together wet and dry ingredients until they are well combine. Gently fold in the berries. Pour mixture into a greased loaf tin and cook for 30 to 35 mins. Serve warm with lashings of butter.
