Guys, it was only a matter of time until I started using annoying word plays on this blog.  I am very proud that it has taken me so long to crack and use one in the title.  This post is about strawberries.  They are in season.  In a big way!  My sister-in-law very kindly helped me get my car from the panel beater’s today and on the way we stopped at one of the local strawberry farms and picked up a 1.2kg box of seconds for $3.  Yup, you did read that correctly.  I am not a huge fan of strawberries, I’ve always thought that made me weird.   So I was very happy to hear Rebekah wasn’t overly fussed on them either.  But $3 for 1.2kg?!  I had to get some and rise to a strawberry challenge.

So, this afternoon I have made some strawberry jam.  It took me about 5 minutes.  And no, I didn’t need to go anywhere near a stove.  And it does not include even one gram of white sugar.  I’ve seen a few recipes pop up on the interwebs for jam made with chia seeds.  These little miracle seeds are full of fibre and omega-3s and are seriously healthy.  They also swell up in liquid to form a gel-like consistency.  So what I’ve done is blend up some strawberries with chia seeds and a dash of rice malt syrup and I’ve put it into the fridge overnight.  The theory is that the chia will swell up and I’ll get a lovely jam.  If it doesn’t really work I can just add it to my morning smoothie.  Win-win!
